Hello, friends! Today’s post is less of an actual “recipe” and more of a “do what you feel/use what you have on hand” situation. Aren’t things more fun that way?? I also think people enjoy building their own meal (I mean helloooo, how popular are the Chipotles and Cavas of the world?), which is why I love doing this DIY Taco Bar. There’s no right or wrong way to do it – use traditional ground beef or go vegetarian by using roasted veggies or tofu; load up on the cheese and sour cream, or go dairy free altogether. This is your show, so you do you 🙂
The great thing about a taco bar is that there’s minimal cooking. The only cooking I usually do is browning some ground beef with taco seasoning. I like to make my own seasoning because it’s super easy (I use this recipe) but a packet of store bought stuff works just the same. If I have leftovers or extra time I like to include some kind of grain like rice or quinoa. In the ingredients pic above I used some of my leftover Summer Quinoa Salad, which pairs beautifully with this taco bar.
From there, it’s all about chopping up fresh veggies and taking stuff out of packaging (i.e. shredded cheese, beans, sour cream). How easy is that?!

DIY Taco Bar
- 1 pound ground beef browned
- 1 packet taco seasoning
- 1 15 oz can beans
- Monterey Jack cheese shredded
- salad greens
- pico de gallo, or other salsa
- avocado sliced
- red onions
- tortilla chips
- lime sliced
- sour cream
- Heat a large saute pan over medium high heat. Add the ground beef and break it up while browning it. Add taco seasoning and cook according to instructions. Chop all the veggies: avocado, red onion, cilantro, lime.Put other ingredients into bowls: salad greens, beans, cheese, pico/salsa, tortilla chips, corn, sour cream. Put out bowls and enjoy!
