Happy April, my foodies! Temperatures are starting to warm up around these parts and I can only hope they’re here to stay :) This time of year puts me in such a good mood: sunshine, greener grass, warmth, and longer days….what’s not to love??
All this talk of Spring has me craving something light, fresh, and fast. And although I wouldn’t dub myself a “salad girl” I certainly enjoy a good vegetarian meal and this one couldn’t be more perfect. Try my Spring Green Salad for an easy, healthy, and delicious meal that will hit that diet reset button and have you feeling sooooo good!
Side note: the homemade green goddess dressing I serve with this doubles as an INCREDIBLE dip, perfect for dipping veggies or as a refreshing topping for anything from tacos to salmon….pardon me, while I happily drown in a bowl of it. Mmmmmm….

How to make it
Put all of the green goddess dressing ingredients into a blender and blend on high until smooth.
Assemble the salad ingredients however you like it (add other ingredients or remove some, make it your own!). Then drizzle with the green goddess dressing.
Done and done – how simple and gorgeous is this?!
- 12 ounces greens (spinach & spring mix)
- 4-6 ounces asparagus tips, cooked & chilled
- 4 ounces shelled green peas, cooked & chilled
- 2 avocados (peeled, pitted, and sliced)
- 1-2 ounces Alfalfa sprouts
- ½ small Red onion, thinly sliced
- ¼ cup toasted pine nuts
- ¾ cup plain yogurt
- ¼ cup sour cream
- ½ cup fresh basil leaves, tightly packed
- ½ cup parsley fresh
- 1/4 cup chives
- 1/2 avocado (peeled & pitted)
- 2 tablespoons freshlemon juice
- 1 clove garlic
- ½ teaspoon salt
- 1/8 teaspoon black pepper
- Put all of the green goddess dressing ingredients into a blender and blend on high until smooth.
- Assemble the salad ingredients however you like it (add other ingredients or remove some, make it your own!).
- Drizzle with the green goddess dressing.
- Tip: plenty of grocery stores carry fresh asparagus tips and shelled green peas in the produce department that can be microwaved right in the bag....perfect for this type of recipe!
- Note: to make a thicker dressing (perfect for dipping veggies or as a topping for fish) use 1 whole avocado instead of 1/2 as noted in the ingredients above.

I’m a California girl through and through and Green Goddess is too, which is why I’m totally partial to it as my go-to Spring dressing.
