This post is dedicated to my sugar-loving, handsome husband who is a 5-year-old at heart:) I’ve alluded to his love for all things sugar in the past, but I realized I hadn’t really made something that was 100% completely him. Until now. Enter these super easy to assemble Ice Cream Sandwiches. You guys, this doesn’t even count as cooking. Seriously. If you want to get fancy you could, of course, make your own cookies from scratch. But that’s not the point of this dessert. These are meant to be a fun and easy way to use your favorite combinations to create a super delicious ice cream sandwich. These would be perfect for a DIY ice cream sandwich bar, as long as you’re OK with rogue pieces of sprinkles all over kitchen :)
Use any kind of cookie you like, any kind of ice cream, and any kind of toppings – have fun with it!
Start by making the cookies according to the package, but slightly under cook them (I cooked mine for one minute less than the minimum time on the package). Then transfer to a cooling rack. Allow to cool completely (around 15-20 minutes). For this recipe, I’m using almost an entire 1.5 quart container of ice cream, which made 6 large sandwiches.
Once the cookies are cooled, take your ice cream out of the freezer (keep in freezer right up until you’re ready to use it). Spoon on about a 1/3 cup of ice cream onto a cookie.
Spread the ice cream out slightly to get it to come all the way to the edges. Then top with another cookie and press down slightly. Use a spoon or knife to fill in any gaps in between the cookies with more ice cream, then smooth out.
Then comes the fun part: roll the ice cream in sprinkles, cereal, or chocolate pieces….whatever your little heart desires :)
Who wouldn’t want to eat this?!
Once you’ve made a cookie, transfer to a plate and put in the freezer. Work quickly to make the other 5 cookies, making sure to put them in the freezer as soon as you’re done making each one. If your ice cream softens quickly, it helps to put it in the freezer in between assembling cookies.
I mean, check these out…if this doesn’t make you smile even a little bit, then I feel sorry for you :) (j/k, but not really)
- 12 large cookies
- 1.5 quart ice cream
- 1 cup assorted toppings

- -For cookies, use whatever you like - store bought, ready to bake, or from scratch.
- -For ice cream, choose your favorite. I used Vanilla.
- -For my toppings I used a combination of chocolate and rainbow sprinkles, mini peanut butter pieces, and fruity cereal.
- Other Tip: If your ice cream softens quickly, it helps to put it in the freezer in between assembling each cookie.
