How’s everyone doing this week?? We’ve had a couple cold & rainy days this week in Virginia, which is a total bummer. But I’m just happy the weekend is almost here. And the weather is looking sunny and hot most of next week – yay!! In anticipation of being able to actually enjoy the outdoors soon, today I’m bringing you THE most refreshing drink I’ve ever had. Seriously, no lie. This Mint Lemonade is EVERYTHING Spring and Summer stands for: bright/sunny, pretty, and oh-so-refreshing! Ugh, it’s making me thirsty just looking at these pics. I may have to whip up another batch today, and bring the sunshine inside :)
Just a handful of ingredients and 15 minutes is all you need. I’m telling you….lemonade never tasted so good. And should you feel inclined to add a shot or two of vodka to this, I wouldn’t judge ;) In fact, I bet that would be DEE-licious!

How to make it
Heat the superfine sugar and 1 cup of water in a small pot over medium low heat. Stir occasionally until sugar is dissolved (around 3-4 min). Allow to cool.
Add all the ice to a blender, and set to crush (until they’re mini bite-sized pieces).
Add the cooled syrup, lemon juice, and mint leaves to the blender. Pulse until the mint is broken up into smaller pieces and all the ingredients are well combined.
Combine the 4 cups cold water, blended ingredients, and sliced lemons in a large pitcher. Pour and serve immediately!

- 1 cup fresh lemon juice (3-4 lemons)
- ½ ounce (small bunch) fresh mint leaves
- 4 cups cold water
- 1 lemon, sliced

- Note: if keeping it in the fridge for more than a day, remove the lemon slices from the pitcher – if left in for too long it will make the lemonade bitter.
