Perfect Pumpkin Muffins

It’s officially fall, y’all!!!! Sometimes I can’t resist rhyming. Sorry, I digress. 

In honor of the first week of fall, I’m bringing you a surprising new favorite recipe at our house: Perfect Pumpkin Muffins :) I say it’s surprising because I’ve never made (or eaten) anything with pumpkin. Not even a pumpkin spice latte, which I know is absolutely crazy to some people. But truthfully, I never understood the draw to pumpkin. Trader Joe’s has an entire line dedicated to pumpkin items every fall season, and they can do no wrong, so I thought it was time to give it a try. And let me tell you, these muffins are LEGIT. No, really…..they are beyond good (Ryan ate 3 in a row the first time he tried them). What makes them so good, you ask?? I’d say it’s the the soft, cake-like texture of the muffin itself (which isn’t very sweet) combined with the crumb topping that’s made with cinnamon, oats, and maple syrup!! Yes, please! I can’t wait to make them over and over this fall and well beyond.
