Strawberries and Cream

Whenever I think of Strawberries and Cream, I think about that time I got pulled over for speeding and couldn’t talk my way out of the ticket *palm to forehead*

What’s the story, you say? Well, let’s rewind about 16 years ago to the summer I started dating my husband, Ryan. He had recently undergone knee surgery and I was going to visit him. And as was always the case with my mom, she made food to help make him feel better. I left my parent’s home to visit him, only to realize I had forgotten the food my mom made. Like most reckless 17 year-olds, I pulled a u-turn and sped back to grab the food. Just as I was turning onto my street, I heard the dreaded police siren. FAIL.

The food my mom prepared for Ryan was Strawberries and Cream, and that was the first of several times that my mom made it for him. To this day it’s one of his favorite desserts (and mine too!). It’s easy to make and you only need seven ingredients, so I’m pretty sure it’ll become a favorite at your house too :) What are you waiting for? You know your Labor Day get together is screaming for it!

Warning: this cream is extremely addictive. It can be eaten on top of other fruits, cookies, brownies, ice cream, with a spoon….you get the point :)

How to make it

First, make the whipped cream. You can do this using a hand whisk which quite a bit of effort, using a hand mixer, or just with a PowerWhip charger. I didn’t have a whipped cream charger to hand so I just used a hand mixer. Put the heavy cream into a large metal mixing bowl. Using a kitchen-aid stand mixer or hand mixer, mix on high for 1-2 minutes, until it starts to thicken and form stiff peaks.

Add the powdered sugar to the heavy cream, mix on high another minute until thick. If you scoop the whipped cream with a spoon and turn it upside down, it should mostly stay on the spoon.

In another metal mixing bowl combine the sour cream, cream cheese, light brown sugar, and vanilla extract. Again mix together using either a kitchen-aid stand mixer or hand mixer until combined. It won’t be completely smooth, that’s OK.

Add the sour cream mixture to the first bowl of whipped cream, and fold the ingredients gently together with a silicone spatula until combined.

Divide the cut up strawberries into 4 bowls/cups and top with the cream. Bon appetit!

  1. 2 lbs strawberries, cut into bite size pieces
  2. 1 1/2 cup heavy whipping cream
  3. 3 Tablespoons powdered sugar
  4. 1/2 cup sour cream
  5. 2 ounces cream cheese, room temperature (see note below)
  6. 4 Tablespoons light brown sugar
  7. 1 Tablespoon vanilla extract

Notes
  1. Tip#1: I usually use Neufchâtel cheese, which is basically light cream cheese, but tastes the same to me. If you'd prefer, just use regular cream cheese.
  2. Tip#2: The cream is seriously good, and people will always want more cream. So I like to layer the strawberries and cream in multiple layers like a parfait so the cream to strawberry ratio is at least 1 to 1 :)
