🌿Peanut or vegetable oil, for frying
🌿1 pound chicken cutlets (or flatten boneless skinless breast to 1/4 inch thickness)
🌿2 eggs
🌿1/2 cup all-purpose flour
🌿1 cup panko bread crumbs
🌿1/2 teaspoon garlic powder
🌿1/2 teaspoon lemon-pepper
🌿1/4 teaspoon cayenne
🌿1/2 teaspoon seasoned salt
🌿1/4 teaspoon black pepper
 
Honey Mustard:
🌿1/4 cup Dijon mustard
🌿1/4 cup honey
🌿2 tablespoons mayonnaise
🌿1/2 tablespoon lemon juice
🌿Salt and pepper to taste
 
1. Preheat a large pan over medium heat and fill with oil about 1/4 inch high. 
2. Cut the chicken into long strips and set aside.
3. Line up 3 bowls: flour; beaten eggs; panko + all the seasonings.
4. Dip the chicken into the flour (cover completely), then the eggs (letting excess drip), then the panko.
5. Sauté the chicken for 3-5 minutes on each side until golden brown. Put them on paper towels to drain and sprinkle with kosher or sea salt while hot.
6. Serve with honey mustard (just mix all those ingredients together in a bowl!)

Every Sunday I map out 3-4 easy dinners, using what’s already in our fridge/freezer and pantry (I also have a list on my phone of fool proof dinners to spark ideas!) I make note of anything that needs defrosting and on what days - as is the case with everything else in life, preparation is key! This has changed the game for us, allowing us to eat healthier and keep take out to a minimum.

SIMPLE TOSTADAS
🌿 ground beef, browned with taco seasoning
🌿 retried beans + sour cream mixed together
🌿 lettuce
🌿 shredded cheese
🌿 salsa
🌿 sour cream
🌿 avocado
🌿 corn tortillas, baked until crispy (or buy tostadas ready made)

It’s soup season!! File this under “best chick It’s soup season!! File this under “best chicken noodle soup ever” - no joke! My CREAMY CHICKEN NOODLE SOUP is easy, packs a ton of flavor, and my kids gobble this up faster than I can refill their bowls 😂 Head to my bio for the recipe link and get after it!!

INGREDIENTS 
🌿2 Tablespoons olive oil
🌿1 medium sweet onion
🌿4 cloves garlic, minced
🌿2-3 stalks celery, chopped
🌿15 baby carrots (1 ¼ cup), chopped 
🌿Chicken breast meat from a Rotisserie chicken, shredded
🌿2 cups uncooked egg noodles
🌿4 cups chicken broth/stock
🌿3 Tablespoons fresh parsley, chopped
🌿3-4 bay leaves
🌿Kosher salt and ground black pepper
🌿1/4 cup butter of choice (I use vegan butter)
🌿1/4 cup + 2 Tbsp all-purpose flour
🌿2 1/2 cups milk of choice (I use oat milk)
 
INSTRUCTIONS 
1. Boil a small pot of water and cook the egg noodles to al dente (firm to the bite), according to the package directions. Drain and set aside. Save the empty pot used to boil the noodles for later.
2. Meanwhile, heat the olive oil over medium heat in a large pot. Add the onion, garlic, celery, and carrot. Stir often and cook for 4-5 minutes, until tender. Then add the bay leaves, parsley, shredded chicken, and a few pinches each of kosher salt and pepper to taste. Stir well, cover, then simmer over medium heat for 10 minutes.
3. Heat the same pot used for the noodles over medium heat and melt the butter. Once melted add the flour and whisk constantly, letting it cook for a minute. Slowly add the milk a little at a time while whisking until there are no lumps. Allow the mixture to come to a slow boil, just until it starts to thicken.
4. Add the cooked noodles and thickened milk mixture to the soup; stir well. Serve warm.
Leftovers for dinner (for the boys) means I can ma Leftovers for dinner (for the boys) means I can make myself a nice little vegetarian meal. And this was using stuff already in the fridge and pantry! If I tried to serve this to the boys we’d have some issues 🥴
