Best Ever Quick Coleslaw

Hey, friends! As summer comes to a close I’m sharing an easy recipe that would be perfect for a Labor Day get together – the BEST EVER QUICK SLAW! I never ate coleslaw as a kid….too many veggies I guess? :) As I got older I learned to appreciate the contrast and texture slaw brings to a meal. And now I’m obsessed with the color, crunch, and sweet/savory/tangy taste – all flavor profiles that are much needed for your typical BBQ or summer meal. Plus, how can you go wrong with a recipe that requires no actual “cooking” – just chop, mix, and done!

Ingredients

  • shredded cabbage (I like using purple but any kind will work)
  • shredded carrots
  • fresh parsley
  • green onions

  • mayonnaise (any kind works, I usually use a vegan version)
  • sour cream
  • Dijon mustard
  • apple cider vinegar
  • granulated white sugar
  • celery seed
  • kosher salt
  • ground black pepper

How to make it

Add all the dressing ingredients into a small bowl, mix until combined, and set aside. 

Combine the cabbage, carrots, parsley, and green onions in a large bowl. Add almost all of the dressing to the vegetables and stir well to combine. Taste and add more dressing to your liking if necessary. 

Chill for a few hours, or serve immediately.

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon granulated white sugar
  • 1/4 teaspoon celery seed
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper

Instructions
 

  • Add all the dressing ingredients into a small bowl, mix until combined, and set aside.
