Not only is done in 30 minutes from start to finish, it’s also incredibly flavorful and of course, healthy! Can I get an amen?!

INGRDIENTS
🌿1-1.5 pounds salmon
🌿2 tablespoons olive oil
🌿Kosher salt to taste
🌿1 tablespoon Italian seasoning
🌿2 tablespoons butter
🌿4 cloves of garlic minced
🌿2 tablespoons white wine
🌿3 tablespoons fresh squeezed lemon juice
🌿1-2 tablespoons flat leaf parsley chopped

INSTRUCTIONS
1.  Generously sprinkle the flesh side of the salmon (not the skin side) with kosher salt and the Italian seasoning.
2. To a large pan, add 2 tablespoons of olive oil and warm over medium heat for 2-3 minutes. Then put the salmon into the pan skin side up (seasoned side should be down in the pan). Cook for 4-5 minutes, until it turns a light golden color. Flip the salmon over and cook 3-4 more minutes.
3. Take the pan off the heat and cover tightly with lid, allowing the salmon to sit for 8-10 minutes until cooked through. Place the cooked salmon on a clean plate and remove the skin (it should easily peel off).
4. Back to the same large pan, turn on the heat to medium low and add the butter, allowing it to melt completely. Add the garlic, allowing it to cook for just a minute. Then add the white wine and lemon juice, stir to combine, and let everything cook together for 1-2 minutes.
5. Take the pan off the heat and add the parsley, stir to combine. Put the salmon back into the pan and serve it with some of the sauce on top.

I’ve been a bit silent on here recently because I just couldn’t find the words to express my thoughts on the spike in hate crimes against the AAPI (Asian and Pacific Islander) community over the last year. The truth is I’m just tired of it all. Senseless hate and violence against people of color has existed for far too long and it’s exhausting. As a mom, it’s terrifying. My children are half white but they look like me. When I look at their sweet faces, I see the light in their eyes, the love they hold, and the promise their future holds. But I’m struggling with something parents of color have dealt with forever – how do I teach my kids to be kind, happy, and respectful when there are people out there who will judge them and potentially want to cause them harm simply because of the way they look? We need to do better – if not for ourselves, but for the future generations who will be shaped by the way we act and treat each other. No matter how much I’d like to shield them, I don’t want my kids to be ignorant of racism. But I will continually teach love, respect, and empathy to make sure they are always part of the solution.
