August….in my mind it’s the last official month of summer even though Fall doesn’t start until late September. And with temperatures soaring into the mid 90s on the regular, I have got the perfect little cocktail to cool you off while you savor every last bit of summer: my super easy and refreshing Watermelon Vodka Cocktail! Just one word for you: YUM. Oh my goodness this drink is so good and very easy to adjust to your liking. Don’t want any booze? No biggie, leave it out completely for a thirst-quenching mocktail that everyone will love!

How to make it
Put watermelon and mint leaves into the blender. Blend on high 10-15 seconds until watermelon is completely broken down.
Strain and add juice to a pitcher. Add vodka, lime juice, sparkling water, and a couple limes slices.
Fill 2 glasses with ice. Pour watermelon mix into each glass and garnish with a lime slice and mint leaf (optional). Enjoy!

- 4 heaping cups watermelon cubes
- fresh mint leaves from 1 long sprig
- 4 ounces vodka
- 1/4 cup fresh lime juice 2-3 limes
- 3-4 ounces lime flavored sparkling water
Instructions
- Put watermelon and mint leaves into the blender. Blend on high 10-15 seconds until watermelon is completely broken down.
